Synthesis of Aromatic Flavoring and Fragrance Compounds
Among the myriad examples of fine chemicals synthesized from petroleum-based
materials are the compounds used in flavorings and fragrances. Many of these
are produced from petroleum-based chemicals because natural compounds cannot
be harvested in sufficient quantities to meet market demand.
Vanillin provides one example. The
current method of producing vanillin, the principal ingredient in vanilla,
involves the use and production of toxic chemicals that are non-renewable
and are dangerous to human health and the environment.
It is highly desirable, therefore, to develop new bio-catalytic
methods in order to produce compounds such as vanillin from environmentally
friendly starting materials.
